The resolution is only but a small portion.
The assets in StarCitizen is built for 4k, everything from textures, to the GUI to even framebuffer effects, that's why it's amazing, not just because of the resolution the game is running at.

That was already said, and it is impessive, especially since 4K has 4x more pixels than 1080p, so the need for assets to look great in 4k really ramps up the costs of production.
