Except that there is ample evidence for evolution. We KNOW evolution takes place, and we apply that KNOWledge when we're doing things like creating antibiotics. Evolution means that life changes over time. This is a fact. We know it happens. We see it happen. Evolution is simply a phenomena. It is not a theory, no matter how big of a sticker you place on a text book. The FACT that life changes over time flies in the face of creationism, or at least the kind of creationism mentioned in the OP.
When people try to say Evolution is a theory, they mean that Darwin's theory on how evolution happens is a theory. A very well supported theory. Similarly, Newton's theory of gravity was a theory that was meant to explain the phenomena of gravity. Even if Newton's theory was wrong (which in some respects it was) that doesn't mean that gravity, an observable phenomena, wasn't occuring. Similarly, even if Darwin is wrong about the HOW of evolution, that doesn't mean that species stop changing over time during reproduction.
