I just finished both Resident Evil Umbrella Chronicles and Darkside Chronicles and I loved both of them, they do a good job connecting the events from different RE games therefore giving coherence to the whole Resident Evil universe. I don't know if those can be counted as remakes though. They're free right now in PS+ in case you haven't played them.
