The co-processor are not processors at... seems more like DMAs and other fixed units... the only big is the audio processor I guess... there are 15 in total (4x DMAs, 5x Audio, etc).
About the redundancy MS stated the eSRAM is bigger than 32MB but only 32MB will be used to get better yields like you said... the co-processor are simple so I don't there are any redundancy.
