I think it looks really good. If enemies actually react differently depending where you hit them then that's a very nice addition to the Souls formula.
But they should add more weight to dead enemies. I know that this might be a reference to Demon's Souls aswell and has the advantage that you can't get stuck by dead enemies as easily, but I think it's better for the immersion to make that more realistic.

Yea, I don't really understand that either, although I usually don't buy games like DR3 I think it looks pretty fun. Several people were talking about framerate dips and stuff, but that hardly ever influenced the enjoyment I had with a game (a notable exception here is Bayonetta, that was pretty frustrating in the PS3 version, but it still was a very good game) and there are still some month until release anyway.
