If the next Nintendo handheld had dual sticks, how would their games change?

Replace the 6.1" screen for a 4" one that is at least 720p (no need for a higher res at that size, imho), throw away half of the plastic shell that is useless and change the location of some buttons (power, home, etc.). The result is something a lot more portable and not so far from what they may do.

 

OT. Their games won't have to change. If a game benefits from the 2nd analog stick they will use it, if it doesn't then they won't. It's that simple.
