Concerning first parties, I would say that Nintendo wins hands-down, both in variety and memorability. I wouldn't go so far as to say they're the only ones creating unique soundtracks though. I found Journey's music quite moving and I personally think the Halo series as strong as ever with its soundtracks.
Third parties have good stuff too. I've particularly enjoyed what the composers of the Assassin's Creed and Mass Effect series have accomplished.
