Is it variable? Like if I attached a 500gb HDD, can I have longer recording sessions?

Just use twitch/ustream if you want longer

I never uses twitch/ustream... are there any limit/restriction for videos?

I'm fine with 5 minutes because I just want to share the Epic moments... so I think I will never share a video over 1 minutes but I'm curious about the streaming limitations with these services.

No limit, you can stream it even 500 hours, then they record 500 hours

If you can stream, you should be able to record more than 5/15 minutes.

Sure, and you can on both consoles.

Do Ustream and Twitch allow you to download what you have streamed?

No but there are some sites can help you do that(like download video from youtube)
