Easy game? Crisis Core. Nail-biting infuriatingly difficult? Final Fantasy Tactics (preferably the War of the Lions version).
XIII-2 is also a really good starting point. It's my favorite of the main-titles...with an asterisk. XIII-2 has a kinda weak first half-hour, especially if you haven't played XIII first and need to get your bearings.
I really don't understand how Final Fantasy got the reputation of being "the be-all end-all of awesome" that it does. I've played most of the games since VII and thought they were all faulted, but enjoyable. Except VII. I despise VII and love Crisis Core. Go figure.
