What the actual fuck? Yes. Absolutely. It's against the law to hit another person and who knows if the other guy thought she was single or not. Would you have liked if someone beat you up because you were having sex with his ex girlfriend? Even if they were still dating as he claims, he simply had no right to do so. There is no excuse for hitting someone (woman or man) apart from protecting yourself or a friend/relative. I would only NOT blame him if he was raping her, which he wasn't.
Also, why is it ok to hit a man and not a woman. Violence is wrong no matter the gender.

No, I would have in no way reacted like that. Of course we all think about it, just like we think we want to punch our parents or friends some times, but never do. No, you wouldn't deserve it, because it's just sex between two adults who both want it. Your gf is not your slave or property, so she can cheat on you all she wants and all you are legally allowed to do is break up with her and maybe give her a piece of your mind (tell her she's a slut or whatever). That's all. And how exactly would you have deserved it especially if you thought she was single? Had this happened to my son, I would have dragged his ass to court until he got what he deserved (i.e. player 1).
