You don't need to be signed in if you're using it on the console that has the license. The license can be transfered as well.
When they said you own the game. Perhaps they meant it doesn't go away if you cancel gold. Contrary to PS+.

I think your wrong, tbh I haven't tried downloading the free games yet because of what I said earler, but early when I got my 360 I downloaded Banjoo-Kazooie, recently I tried playing the game while I was offline and it wouldn't let me, it treated the game as a trial version.

Have you changed your 360 since you first downloaded it? I have quite a few games that I got on my first 360 that only work when I'm signed in to live on my slim.
