In general, Xbox had more powerful hardware, so on the average games had fancier graphics on the original XB. However, when it came to some of the best looking games of that gen, on any system, hands down, Gamecube was king. Games like Metroid Prime, Pikmin, the RE games, and Twilight Princess especially, all looked a LOT better than most Xbox games. Of course it could probably be argued that overall the absolute top one or two best looking Xbox games were probably "better" graphics overall. Then again, PS2 had, in games like Shadow of the Colossus or even God of War, held it's own. But for my money, for 2006, I was blown away by how good TP looked. I would love to see an HD remake of that, though for the time being, I'd much rather the new (hopefully epic) HD Zelda just have a similar art style.
