As for collectibles, they are linked to your PSN id, so they carry over throughout. Personally, I looked everywhere in my first and got 104 collectibles, so will be using a guide next time

No you can only play a new game plus on the highest difficulty you played at.  So you'll have to play survivor then survivor plus.
