I think its a requirement to list the value of items you can win as you are supposed to still pay taxes on them as if they were income. I dont think you have the option to take cash instead.

But that doesn't mean that is the final price, they just have to have something there i believe.

maybe it depends on the contest.  my HS calculous teacher was on the price is right.  he didn't like what he won so he took the cash equivalent instead.
