Contra 3 has one my favorite boss music ever props for bringing it up (fighting that giant terminator like robot with this music playing is gaming gold).
They sure don't make them like they use to, I don't think developers realize how important boss music are, for eg. in contra 3 you would have probably threw your controller at the screen if you weren't pumped by the music, because its just that much more satisfying to fight the bosses with these type of music keeping you pumped even if you died over and over , if you understand what I mean.
But as some have already mentioned its more to do with western games as you still get them in Japanese games.
