That is what the GT app for smartphones will do... it will use the GPS tracking to recreated a couse in the track editor... well that what I expect.

"Players will also have the option of plugging in data from a GPS to create a course based on it." 

That will be a really revolution feature in the GT franchise if they can implement in the right way.
