Because if you actually watch the Kinect 2 demonstration videos available on several other sites, you'll see how well it works.
The noise cancellation of Kinect 2 is phenominal. The demonstrate the actual audio captured by the sensor, then playback the audio after it's been processed by Kinect 2. There would be no need to fake it.
