Easy mode could be slightly higher souls and item drop rate making you level a little bit faster and checkpoints right before boss battles.

1.You can easily get a ring that can increase your item drop weight...(not that item drop rate really does much in DS...Unless if you want to save a couple souls on easily obatinable items)

2. Souls /leveling are so easy and not-important I wouldn't mind if they did that for the 1 and only mode that it has. You can be lvl 70 but still not able to beat the game...and you can be lvl 1 and be able to beat the game(only if u played through it once of course)  There are also rings/armor that can Greatly increase your soul gain

3. As I said before you can skip enemies easily if you have been through the area a couple of times...Mostly in 30 seconds.Don't want to re-fight eneimies? Then avoid them.

See pretty much everyone suggestioning easy mode haven't really made it far in the game and don't realize that these problems aren't really problems as they appear at first glance. Definitely not so to warrant an easy mode. Items like Drake sword and certain spells/rings/armor are easy mode.As are guides and stuff like that. Learning to parry is also easy mode for mobs...Something I didn't do till the last boss but with practice can be done very very early.

Yes ofcourse it's easy if you've played the game already. Or check online, start with the skeleton key, grab the sword and shield at the sleeping dragon in valley of the drakes. Then the whole first part of the game becomes 1 hit kills instead of carefully fencing while you're the easy kill. So great it has an easy mode already, but it's obscured. How is that any better then simply coming out with it in the options?

On my first play through, no I couldn't simply run past enemies, not enough health and damage mitigation. Plus I had missed the shortcut on the bridge (I could fall down, tried to unlock the ladder,  didn't seem to work, so figured it was oneway only) trekking back to the church became a real chore. Later I got stuck in the Darkwood garden. I had the key to the depths (well a key, didn't know what it was for), yet missed the door. There I kept dying over and over with my crappy club. I finally gave in and checked online wth I was supposed to be doing and found out I had pretty much screwed up my character beyond repair.
So on restart I grabbed the easy sword to get back to where I was quickly. That ruined the little sense of achievement that was left from my first attempt. Simply walk up and stab and 95% is dead in 1 hit. Suddenly it was a hack 'n slash game. If the game world wasn't so immersive and interesting I wouldn't have bothered with a 2nd attempt.

Anyway what's wrong with an optional system that gives you the choice between instant retry, or going back to a bonfire to prepare better. And allow to reconfigure your character at firelink shrine. Much better in my eyes then looking on message boards and risking spoilers or using some cheap overpowered weapon, or having to start all over.

Optional hints, optional explanation of game mechanics, optional lower cost of upgrades, doesn't effect you. They can add a special throphy for playing the real obfuscated won't even tell you what the buttons do, no shortcuts, no easy gear hidden away game mode. Now everyone that can read a wiki can claim to be a Dark Souls god, no achievement there.
