Then don't remove the respawning enemies and instead let players keep some of the souls they earned from their past attempt (and get the rest if they reach their bloodstain). This could allow the player to keep attempting to moving forward without feeling the need to stop and grind souls, and ultimately smoothing the learning process. I believe the frustration stems from the sense of lost progress first and foremost, and that isn't limited to having to re-kill enemies (which is probably the most important teaching tool in the game).
