Console games are too expensive to make to risk unproven formulas. They stick with the tried and true or some viariant thereof.
However, if you haven't been paying any attention there been an incredible explosion of original games on PC (indie) and mobile. Something Sony and Nintendo are trying to tap into for they next gen systems.
