Let's compare madden (One of EA's biggest games) to Wii madden and you can tell me which one is better.
Right now WiiU doesn't even have a big install base and the games are too similar to the X360/PS3 for them to invest at the moment. Once again games will sell better on X360/PS3 for online capabilities in this case.

The issue is that those two sentences which sum up your original post are contradicting each other.
Also, people are mostly upset about EA's recent bullshit PR.

PR bullshit or not, people need to realize that it is a business not a charity

The thing is, EA already released a Madden for WiiU. Would it really be that big of a time/money sink to just update the roster - even if it meant no new physics again - for a version of Madden '14? Is it going to sell that terribly that they'd see it as a money loser for them? I'm no expert, but I can't imagine that it wouldn't be a profitable endeavor for them at this stage.
We can debate Battlefield 4 not coming to WiiU until the cows come home, but if the N64, GC, Wii... even the DS received Madden games in their day I really don't see any logical reason for skipping a quick port for the WiiU this year.
