GT5 load the tracks to HDD not RAM... the time is to make the swap in the HDD.
We are talking here to load the game data to RAM... not HDD.
The BD read speed is 200MB/s in PS4... the RAM speed is 176GB/s... so to load 7GB from BD to RAM is less than 1 minute... now to write in HDD is slow because the HDD 5400rpm write speed is ~30MB/s.
