The best part is he does not even know, that is genius manipulation at work. She studies him, sees his strengths and weaknesses and appeals to them. She is no meek girl with dreams of knights and princes, she is a woman of court that is as dangerous as anyone. Only Cersei seemingly notices her manuevering and she cannot reach Joffrey with her tactics. Never have I watched a mother so desperately want to throttle their own son as her scenes being told "a woman should just do what they are told!"

Well, a bit. The point is what Joffrey was accostumed to with Sansa is not what he is getting now. Sansa was naive, as would most girls her age be. Look to Cersei as an exmaple of how that cynicism creeps in as the dream romance crumbles. I don't hate Sansa, she is a real person and has flaws, but what the story is about is how those traits can be good or bad things. In King's Landing what is worst in us is often most valued (look towards Peter Baelish).
