8 should be more than enough, even for taxing games. Anything over it is a bit overkill, but if you want to future-proof your rig and have money to spare, you can opt for a 16 - 32 gb config.

What would require going above 8 gigs?

But if I do upgrade I might just go 12-16 gigs.

If you want to run a lot of taxing applications such as editing tools and 3D software or computing programs. Anything other than that, barely touches the 6 gb mark.
