Hmm....this is a tough question. Usually I prefer remakes to arrive at least ten years after the original game -- although the Resident Evil remake and The Twin Snakes are obvious (and successful) exceptions to that rule. And, ideally, the original game would have been less-than-stellar to begin with, so that a remake would have room to improve.
So I'll go with these:
1. Zelda II: The Adventure of Link
2. Castlevania II: Simon's Quest
3. Battletoads
4. Quake
5. Resident Evil 2
