I think this is partially true - but its more complex than this again. I think you can more accurately look at it, by setting up an "appeal" factor for each demographic. I do this, as its possible (and likely) that *every* console has some appeal for each demographic. To say Nintendo is NOT targeting 15-35yr old males is rubbish - but you can say that they are targeting them LESS.
i.e.
(these are some numbers I just made up - feel free to re-evaluate and post your own):
Wii / 360 / PS3:
Males:
5-10yr : 90 / 30 / 50
10-16yr : 60 / 70 / 80
16-30yr : 40 / 60 / 90
30-50yr : 70 / 70 / 50
50-80yr : 90 / 30 / 30
Females:
5-10yr : 90 / 10 / 20
10-16yr : 80 / 20 / 40
16-30yr : 70 / 20 / 50
30-50yr : 60 / 10 / 10
50-80yr : 40 / 10 / 10
What Nintendo has done (and its been widely discussed) is attract new people into the "gaming pool" - expanding the potential market. As stated in a recent press release - its not about fighting for a bigger portion of the same pie - its about increasing the total size of the pie (or attracting consumers outside of the pie completely). Consumers that MS & Sony can't touch.
