You must use the blade mode and cut the enemy where the red square tells you to, that's where the blue thing is (I call them that because I don't really know what they are, they look like blue intestines xD). The person playing the demo does it nearly the beginning:

I hope it helps... but if you don't like it you don't need to force yourself to like the game. Not all of us have the same tastes in games :P
