You are looking at things from a Turkish mindset. Ofcourse you would think that it's a great oppurtunity for you if you were poor as in your case you would get to keep your faith. On the other hand you should try appreciate how traumatic it would have been for parents not only to give up their children but also to be seperated on a spiritual level. Their children were stripped of their Christian identity and were forever seperated from their original kin.
As for fighting their own kin let me be more specific. What I mean by that is if the Christians rebelled against the Ottoman authorities they would be cut down by the Janissaries. Hence they would be killing their own kin or blood.
