Actually, the main ideas of the show (including the ending) were already planned from the beginning.  There were parts and individual story elements along the way that were ad libbed, but the main element running in the background where evil devised an elaborate plan to bypass the rules and dispose of good was always present throughout the entire show and when you rewatch it you notice those events and things make a lot more sense.

It makes it demotivational to watch as compared to, say, Game of Thrones, which seems to have quite a complex and intricately weaved storyline.

The first season of LOST focuses greatly on the characters and their past, as they are very important to the story.  But the way the story is told where they purposely make you think one thing initially only to reveal it as another (often in stark contrast) is one of the things I love most about it.

So we'll have to agree to disagree that LOST doesn't have an intricate and well thought out storyline.  :)
