Wii U has no ethernet port

Note that personally I'd like to have both (ethernet and HDMI cable). However, if given the choice I'd go with the HDMI (not because of the image quality increase, I'm not a graphic whore) but because without a HD connection you'll have to play with lag even offline due to the TV doing the upscaling.
