You simply can't ignore God of War.
God of War has the biggest dedicated fan base out of all of Sony's IPs (https://www.facebook.com/godofwar.page?ref=ts), it's Sony's #1 most critically acclaimed and 2nd best-selling IP, whether you personally like it or not is irrelevant, if you're going to list a bunch of classic Playstation IPs you can't leave out the genre dominating God of War series.
Team Ico games are nothing special, they sell very poorly and barely scrape by the right to be called critically acclaimed, LittleBigPlanet however is a successful and significant Sony IP. The Uncharted series is hardly any more significant or well-made than the Resistance, Killzone, Ratchet & Clank or Infamous series, only Uncharted 2 is commonly praised by a lot of people whereas Uncharted Vita and the first Uncharted received a universal 'meh' and Uncharted 3 is widely considered a disappointing sequel. Also every game in the series besides the first Uncharted has been massively bundled which makes them appear to roll with the truly big Sony IPs like Gran Turismo and God of War when really it isn't a big IP at all, it's just middling.
And to answer your question, no. Nintendo should not 'copy' Sony. If you like the style of Sony's IPs then buy a Sony platform, same applies if you like the style of the IPs from Nintendo, Microsoft etc.
