So is iOS 6 better for my iTouch than iOS 5? iOS 5 is absolutely shitty for it. Should I go back to 4 or upgrade to 6? 

Noticeable perfomance improvements are to be seen expected with 4S and 4. I am not sure about your iTouch, is that the equilivant of 3Gs? This may help you. This is Beta 3, there is 4 and final release, both had "perfomace improvements" under their changelog. I am not sure if it makes it faster.
