1GB on current games is overkill and definitely great.
Now, when the rest of next-gen starts it will AT MAX have 4GB total in the system. You have to figure they will likely be about the same with 1GB for OS and system while rest is for games. So that means you'll likely see them having anywhere from 1GB to 3GB for games alone. 3GBs is just a waste even if you consider where games will grow over the next few years, so there is a strong possibility they'll only have up to 2GB for games on those systems.
There is no way that difference is going to be majorly impactful on 3rd parties. The bigger concern is if the GPUs and CPUs are significantly better than Wii U. That's the only case where Wii U would be f'ed with future 3rd party support in 2015 or so.
You also have to consider as Wii U matures, that 1GB for OS will likely shrink and more of it will go to games. Probably as much as 1/2.
