I can speak only for the PS3. Because when games like FF XIII go into the Xbot with its ridiculuous DVD player the game gets dumbed down. FF XIII has been made linear otherwise it would have been a DVD swapping nightmare, FF XIII-2 had nearly no FMVs the one Final Fantasy games are so famous for. If FF Vs XII will ever see the light it is better not to be multiplatform because as it is now that game simply can not run on DVD (source: the developers themselves).

Also multiplatform means to find a compromise between the two systems. You can see indeed that FF XIII, which was developed on and only for PS3 is much better on PS3 than on X360, where it has just been ported. FF XIII-2 which has been developed from scratch on bothsystems has a lesser quality on PS3 than FF XIII. 

Dark Souls instead is about the same on both platforms. But it appears to have the same quality of Demon's Souls. So no improvements that could happen if it was kept a PS3 exclusive.
