GT6 might have a showroom in 4K, doubt they'll get a track running at that res. Maybe an bare bones test track at 2160p to give a taste of the gen after. Photo mode will look nice in 4K anyway.
GT4 to GT5 went from 640x540 (upscaled to 1080i) to 1280x1080 (upscaled to 1080p). 4 times as many pixels. Heck maybe they'll even get the game to run at 2560x2160. PD loves their polygons and resolution, there still won't be any love for trees though :)
Pixeljunk might do a 4K game too, other arcade titles as well, if not simply as an easy 2xFSAA.
