Megaman 2 is awesome. If you really want to be impressed by how much musical depth can be achieved by a pair of square waves and a triangle wave, download the music from the Japanese Final Fantasy 2 (for the NES/Famicom).
Gauntlet was always one of my favorites. Some groovy stuff going on there.
Ninja Gaiden 2 had the best opening music of any NES game.
The Battle of Olympus had some great ancient-sounding music.
The Guardian Legend gets the adrenaline pumping every time.
