Considering how long Polyphony took to get GT PSP out, I wouldn't hold out hope of it saving the Vita's life (ahoy!) any time soon.
That said, it's almost a given that we'll see it one day. I hope sooner rather than later.
Now, something I WOULD like to see on Vita - Ratchet and Clank, or Jak, by High Impact Games. Sure, most people didn't like their PSP versions, but I enjoyed them both. Get on it, Sony!
