If the violence and gore makes sense to the setting, story and characters like it does perfectly in the God of War games then it's completely fine with me.
Kratos isn't exactly going to pick flowers for the elephant man and try to hug the thing that's trying to kill him, this is set the brutal realm of Greek Mythology and Kratos is the leader of the fearsome Spartan army, once he has a goal to achieve nothing will stop him. The Elephantaur opposed Kratos and therefore deservedly got its head ripped open.
....A moment of silence for the poor elephant man.
