There are a lot of games like that, such as Super Meat Boy.
The other thing I'd note about Minecraft is that, from what I've seen, there are multiple leaderboards, such as a 'normal' leaderboard, and not a global leaderboard. If this is the case, then the numbers would indeed be undertracked. Oddly enough, not everyone will play and update their data on such a board. Toy Soldiers is a good example of that. They have easy, normal hard, and global boards. Only about 60-70% of users will actually accrue statistics on the 'normal' board.
