I have only played as France and Sweden so far, but I love those two. Once I'm done with my current Swedish/Scandinavian campaign I'll probably try England or one of the Italian states. Would be cool to test one of the islamic nations but I don't know which one I'd choose.

I don't think I've ever played a game all the way thru :P

I ususally play as Sweden, France, Burgundy or Byzantium. But after a while it gets too damn easy :P Once as Byzantium (starting with two provinces separeted by sea) I had an empire from India to Italy... But I'm too lousy to actually up the game a bit =P
