I think they do sell very well already, UC3 will easily reach 6 mil this year, may go on to do 7. Uncharted 2 isn't so far behind that and considering the first game came out when PS3s user base was vastly smaller than it is now, it also did very well. I did a LOT of posters for UC3 here in London and the odd trailer now and then but you're right, the franchise has such a broad appeal and can look insanely good in trailers as they're so cinematic and beautiful, so the potential is not being reached. I think there are a few issues here:
1) Funding. Sony publish a megaton of games, especially last year. They had to divide large sums of money between 5 or 6 major releases last year, the implications of this are obvious.
2) Communication. Sony just isn't good at marketing, and although they've improved in recent years, it's still not enough to really catch peoples attention.
3) Competition. Uncharted on PS3 is a november release, last year it went up against BF3 and MW3. Those games alone had a combined marketing budget of 200 million. This goes back to 1; Sony just can't afford to compete with that.
