Could it be done, yes. Should it be done, I'm leaning towards no. Part of what makes Smash Smash is the platformer elements and while single player platformers have done well enough in the transition to 3d, multiplayer ones have not.
I think Powerstone is about as close to Smash you can get with 3d gameplay.
