Probably because "more valuable" can be viewed with more definitions than stock/market value.

and BRAND value, more ethereal... and show below

Apple wins the first, Coca Cola wins the second.

Investors win with the first.

There's also the idea of stability and long term value. People think Apple will probably not be where they are now in twenty years, Coke will be.
