I will say this as a 360 then PS3 gamer. You need to get used to the controller first (keep playing PSN games to start with) and input lag (for the exclusives due to all the post process and triple buffering). Once that's out the way then you will enjoy it a lot more. One of the first games I played on my shiny new PS3 was KZ2 and I hated the controls but this was compounded by the fact I was more used to the 360 control pad especially for FPS.
You can change it to a more COD style in the settings (after patch) but one thing you can't change is the abysmal controller input lag. I was used to playing COD, and Halo which both have an input lag of 100ms or less and then playing KZ2 with an input lag of 150ms + really did my head in. But you will get used to it and in all honesty KZ2 is more about the experience then the gameplay . Just whack up the sound (I played in 5.1 DTS) and be drawn into the titanic battle against the Helghast.
My personal favourite PS3 exclusives are the Uncharted Series, GOW3, Journey and Valkyrie Chronicles. Technically and from a cinematic point of view they are a notch above the best 360 exclusives but they tend to be solitary experiences with solid but not amazing gameplay but that's of course just my opinion and for me personally gaming isn't just about the gameplay so I'm not too fussed.
Something I did was start from the beginning of a franchise no matter how old. So I played GOW HD Collection 1 before I played GoW3. I played Resistance in order and same with Uncharted. I didn't do that with Metal Gear Solid was left bitterly disappointed with MGS4 but there was no HD Collection out then. If you do plan on buying Last Guardian (when it eventually comes out) then I would try Ico and SOTC HD Collection beforehand (as I am doing now). I just feel doing that makes each subsequent sequel that much more enjoyable and it's good to get a sense of history from the developers.
