In Final Fantasy III I had that problem only in the final boss, but the fight was so epic and dramatic (I survived for a long time before she killed me), that I felt that while my classes were not good enough, it was more fun to suffer a little bit more, grind one-two hours or so, than to beat her with 4 Ninjas/Onion Knights.

I usually pick a fighter, black mage, white mage and a fourth class I expect to be good and I still don't like the system.

It's not my favorite system too, but oh well, I don't hate it. What is your favorite then? Of the newer ones Radiant Historia character evolution system/battle system was great, I had a great time playing it. But then I watched that same guy's let's play of it, and boy, was I playing it "wrong"!
My least favorite is Final Fantasy VIII... junction...
