Ah Phantom Ship, my favorite level in the game. It's a cinch if you abuse your two prepromotes, but much more fun if you don't.

Just bring at least one healer, and equip her with a Torch Wand. Use your fliers to clear the top or bottom of enemies (it helps if at least one of them has a Torch), your tanks (for me, it's usually Gilliam/Franz/Ephraim) to thin out the horde, and the rest of your troops to press forward to the third ship once your tanks have thinned the enemies' ranks. Keep your tanks on the second ship, using the ship's masts to block the rear-attackers from reaching your weaker units, and you'll be fine. Once you realize that the front flips around turn 6, everything snaps into place.

Realistically, if you seize the choke points and use your fliers aggressively, your healers and ranged units should never take one hit.

I guess the chief thing I'm failing to do here is using my tanks effectively to clear out the second ship - I tend to use my damage dealers (Ross, Garcia, Joseph) for that. Which, on another note, is doubly stupid because they could seriously moidalize the second wave of gargoyles. Ehhhhh.

I was using my healer's torch staff, though. That's something I was doing!
