Nope, they shouldn't wait for next gen.
I found a potential release date. Zavvi seems to think the game is coming out on the 23rd of November 2012, http://www.zavvi.com/games/platforms/xbox-360/gta-grand-theft-auto-v-5/10569985.html. Could just be a placeholder, but I wouldn't be surprised if it did release sometime at the end of this year.
