Yes it's an assumption but he's the son of a demon and a human. That's more than enough for me to explain him having white hair (and the fact that he can have a blade go through him and still be able to fight).
My take on this reboot is that it's not at all related to DMC 1-4, it is not an origin story, their Dante and the one of the other games is not the same character. So even if they screw it all up, it won't affect Dante's characterization in the original games.
