Wiimote, Wiimote/Nunchuk or Classic Controller. I recommend the CC option, because it offers both a d-pad and a stick, so you can switch between them as necessary. The d-pad is more accurate on land, the stick more precise underwater. The Wiimote setup is the worst, because the B button is used to run.

And yes, it's more about the graphics than the gameplay. There are lots of trial and error sections in this game.

trial and error? Can you give an example of this? It sounds like something you need practice to be able to pass, just like some old school platformers.
