They did far more with the franchise.
You see, the point of Final Fantasy is to tell a story, to immerse the gamer in another world. Squeenix got rid of the tired, menu driven gameplay and time-wasting exploration of previous games and told a story. They were able to tell this story only because of:
1. The superior technology of the PS3: photorealistic graphics are essential for immersing players in a different world, and this is why they are the priority for modern devs, and why fans and game journalists alike obsessively compare the graphical capabilities of consoles; the console with the best graphics will have the best games.
2. Streamlining the game by getting rid of unnecessary and wasteful elements like towns, mazes and complex battle systems.
Squeenix used to be the GNU+Linux of the gaming world, always concerned with things of interest only to the hardcore and creating products that are a mish-mash of unnecessary features. They are now the Apple of the gaming world, great innovators producing games that are sleek and elegant with all the useless or confusing elements removed.
